Big Citrus "Bontan (Wén Dàn)", Can it be Fruit Wine?

preparation for fruit wine made of big citrus Bontan. Strong Spirits and Crystallized Sugar

I've got a big Citrus "Bontan". Since I know that its peel is very thick and fruit is small, I decided making a kind of fruit wine with strong spirits. Maybe it should not be called "wine", because there is no process of brewing. Anyway I bought "White Liquor" which has 35% of alcohol and crystallized sugar today.

Cut Bontan in two halves

It surprised me a little because the fruits inside was red. I thought it would be yellow.

Bontan was cut into pieces to put them into glass bottles

I cut the fruit and its peel into pieces, and put them into glass bottles which were already scalded by boiling water.

Crystalllized Sugar piled up onto pieces of Bontan in the glass bottles

Then I put Crystallized sugar on Bontan in the bottles.

Pouring Strong Spirits White Liqour in the bottle

In the last step, I poured strong spirits "white liqour" which is available in any liqour shops in Japan.

Bontan Fruit Wine just capped

Completed. I don't know how many months it will take until the taste being good. Maybe three months or some. It is said that during crystallized sugar being melted, osmotic pressure extracts good tastes from fruits.

Fresh Bontan is also good to eat

Some pieces of Bontan were left. I think just eating fresh one is also good. Would you like to eat them?

Wapping plastic says the origin of this big citrus fruit "Bontan". In 1772, the first year of Japanese imperial era name "An'ei", the captain "Xie WenDan" avoided storm and reached Akune. He was trading between GuandDong in China and Nagasaki in Japan. Landed on Kuratsu port, he was soon interrogated by Japanese. But he was very pleased by the kindness of transrator Mr.Yoshiuemon Harada. For thanks, the captain gave two fruits "Zhū Lè" and "Bái Lè" to Mr.Harada. Mr. Harada tasted the fruits and named them Bontan after the captain Xie WenDan. Bontan is Japanese "On-pronounceation" for WenDan in Chinese. Mr. Harada planted the seeds of the fruits.

It's an interesting story which tells you histrorical exchanges between China and Japan. Let me quote these explanations on the wrapping vinyl.
